Cluckin' Chicken and Sassy Rice Dinner

Ingredients:

  • 2 cups of Jasmine rice

  • 4 boneless, skinless chicken breasts

  • 1 tablespoon of olive oil

  • 1 onion, finely chopped

  • 3 garlic cloves, minced

  • 1 can of diced tomatoes

  • 1 teaspoon of paprika

  • 1 teaspoon of cumin

  • 1/2 teaspoon of cayenne pepper

  • 1 cup of chicken broth

  • 1 lemon

  • Salt and pepper (to taste)

Instructions:

  1. In a large skillet, heat the olive oil over medium heat.

  2. Season the chicken breasts with salt, pepper, and paprika. Place them in the skillet and let them sizzle until they're nicely browned on both sides.

  3. Remove the chicken from the skillet and set them aside on a plate.

  4. In the same skillet, sauté the chopped onion and minced garlic until they're fragrant and beautifully golden.

  5. Add the diced tomatoes, cumin, and cayenne pepper to the skillet. Stir them together.

  6. Now, return the chicken to the skillet, nestling them into the saucy tomato mixture.

  7. Squeeze the lemon over the chicken to add a zingy punch.

  8. Pour in the chicken broth, cover the skillet, and let it all simmer on low heat for about 20 minutes.

  9. Meanwhile, cook the jasmine rice according to the package instructions.

  10. Finally, serve the cluckin' good chicken on a bed of sassy jasmine rice.
