Homemade Gluten-Free Pita Bread

  • 1 1/4 cups gluten-free all-purpose flour mix

  • 1/2 cup almond flour

  • 1 1/2 teaspoons xanthan gum

  • 1 teaspoon baking powder

  • 1/2 teaspoon salt

  • 1 teaspoon sugar

  • 2 tablespoons olive oil

  • 1 cup warm water (between 105°F to 110°F / 40°C to 43°C)

  • 1 1/2 teaspoons active dry yeast

  • 1 egg, beaten (for brushing)

  • Sesame seeds (optional, for sprinkling)


  1. In a small bowl, combine the warm water and sugar. Sprinkle the yeast over the water, stir gently, and let it sit for about 5-10 minutes until it becomes frothy.

  2. In a larger bowl, whisk together the gluten-free all-purpose flour, almond flour, xanthan gum, baking powder, and salt.

  3. Make a well in the center of the dry ingredients and pour in the yeast mixture and olive oil. Stir until a dough forms. The dough will be sticky.

  4. Cover the bowl with plastic wrap or a clean towel and let it rise in a warm, draft-free place for about 1-1.5 hours or until it has doubled in size.

  5. Preheat your oven to 475°F (245°C) and place a baking sheet or pizza stone inside to preheat.

  6. Divide the dough into 4 equal portions. Dust your hands and a clean surface with gluten-free flour to prevent sticking.

  7. Roll each portion into a ball and then flatten them into rounds, about 1/4 inch thick, on a piece of parchment paper.

  8. Brush the tops of the pita rounds with beaten egg and sprinkle with sesame seeds if desired.

  9. Carefully transfer the parchment paper with the pita rounds onto the preheated baking sheet or pizza stone.

  10. Bake for 8-10 minutes or until the pita breads puff up and turn golden brown.

  11. Remove from the oven, let them cool slightly, and serve your gluten-free pita bread with your favorite fillings or dips.
