Mexican Street Corn or Elote


Ingredients:

  • 4 ears of corn

  • 1/4 cup mayonnaise

  • 1/4 cup sour cream or Mexican crema

  • 1/2 cup crumbled cotija cheese (or feta cheese as a substitute)

  • 1 teaspoon chili powder (adjust to taste)

  • 1/2 teaspoon paprika

  • 1/4 teaspoon cayenne pepper (optional, for extra heat)

  • 1 tablespoon lime juice

  • Fresh cilantro, chopped (for garnish)

  • Lime wedges (for serving)

  • Salt and pepper to taste

Instructions:

  1. Preheat your grill or stovetop grill pan to medium-high heat.

  2. Peel back the husks of the corn, but leave them attached at the base. Remove the silk threads from each ear of corn. Then, fold the husks back over the corn.

  3. Grill the corn over medium-high heat, turning occasionally, until the husks are charred and the corn kernels are tender and slightly charred, about 10-12 minutes. The husks will protect the corn from burning while allowing it to steam and infuse flavor.

  4. Once the corn is cooked, carefully remove the charred husks and set them aside. You can use them as handles or create corn husk handles by tying them together with kitchen twine.

  5. In a small bowl, combine the mayonnaise, sour cream (or Mexican crema), lime juice, chili powder, paprika, cayenne pepper (if using), salt, and pepper. Stir well until the mixture is smooth and thoroughly combined.

  6. Brush each grilled ear of corn generously with the mayonnaise mixture, ensuring all sides are coated.

  7. Sprinkle the crumbled cotija cheese (or feta cheese) evenly over the corn, pressing it gently so it adheres to the mayonnaise mixture.

  8. Optional: For an extra burst of flavor, sprinkle some additional chili powder or paprika over the cheese.

  9. Place the street corn back on the grill for another minute or two, just until the cheese starts to melt slightly.

  10. Remove the corn from the grill and transfer it to a serving platter.

  11. Garnish the street corn with chopped fresh cilantro.

  12. Serve the street corn hot with lime wedges on the side. Squeeze lime juice over the corn just before eating to enhance the flavors.
